Water for green tea, according to regions of the world that prefer mild tea, should be around 80 to 85 °C (176 to 185 °F); the higher the quality of the leaves, the lower the temperature. Hotter water will produce a bitter taste. However, this is the method used in many regions of the world, such as North Africa or Central Asia where bitter tea is appreciated. For example, in Morocco green tea is steeped in boiling water for fifteen minutes. In the West and Far East a milder tea is appreciated. The container in which the tea is steeped, the mug, or teapot is often warmed beforehand so that the tea does not immediately cool down. High-quality green and white teas can have new water added as many as five or more times, depending on variety, at increasingly high temperatures.

Chun Mee Tai Pan Superior

$ 7.00 USD

"Tai-pan" was the name given to an influential foreign businessman doing business in Hong Kong and China during the 19th century. The life of a Tai-pan in those days was often exciting and luxurious, as undiscovered trade routes were opened and they quickly gathered great fortunes on the frontiers of world commerce. Like many wealthy businesspeople in any time period, the Tai-pans of old China enjoyed the splendid accessories of wealth: sumptuous feasts, fine wines, racehorses, and the like. In fact, they were most likely very influential on the development of the luxury market for most products in the Far East.

In an effort to reach this market, a tea grower at the time living in Hunan Province decided to create what might be considered the first "luxury" tea developed for Western tastes. The tea maker knew that the Tai-pans had tastes for the finer things in life and therefore had highly refined palates. So, he was determined to make a tea which was sweet and smooth. He also surmised, based on their apparent appreciation for Eastern art, that the Tai-pans must have an eye for beauty and understood that the leaf style would need to be very fine and evenly graded. It was named "Chun Mee," meaning "precious eyebrow" to describe its lovely shape. The Tai-pan businessmen loved the tea and quickly added it to their steady diet of Cuban cigars, caviar, Cognac, and the like.

The days of the old Tai-pan may be over, but this fantastic tea remains. Still manufactured according to the old techniques, Chun Mee Tai Pan Superior Tea has a very fine, emerald leaf that infuses to produce a mild yellow-green liquor. The cup is sweet, with hints of an almost Sencha-like clover butteriness, grassy notes, and a long exceptionally smooth finish. Use one to two teaspoons per cup and steep about 3 minutes in 180-degree water.

Crime of Passion

$ 7.00 USD

Our Crime of Passion tea blend was inspired by and named after the sultry beaches of Rio de Janeiro where there are sun worshipers and lovers feeding each other freshly-cut pieces of papaya and passion fruit right on the sand. The sweet profiles of both fruits perfectly complement the heat, humidity, and goings on at the beach. The combination of heat, sand, water, and fresh fruit is so enticing, it should be a crime in itself. This refreshingly sweet Crime of Passion tea has a sinful citrus flavor you'll want to enjoy again and again. The natural sweetness of the Sencha-style green tea from Hunan Province in China makes it perfectly suited for blending with dried papaya pieces and natural passion fruit flavors. Enhanced with beautiful sunflower petals.

Use one teaspoon per cup and steep 2-3 minutes in steaming water for a hot tea that can ignite internal passions. Or see our "How to Make Iced Tea" section for an iced tea that takes you back to those hot Brazilian beaches.

Decaffeinated Green Tea with Apricot

$ 8.00 USD

Our Decaffeinated Green Tea with Apricot is a truly delightful Japan Sencha green tea naturally decaffeinated and lightly flavored with natural apricot and enhanced with apricot flowers. Delicious hot as well as iced. Use one teaspoon per cup and steep 1-2 minutes in steaming water.

Our decaffeinated teas are naturally decaffeinated using a process that removes caffeine without using chemicals of any sort. The freshly plucked tea leaves are briefly soaked in water and gently flushed with carbon dioxide (CO2). The CO2 binds to the caffeine molecules and extracts them from the tea, leaving behind all the natural proteins that give tea its flavor. It also leaves many of the polyphenols and antioxidants intact, so it's still good for you.

Moroccan Mint Tea is a blend of China gunpowder green tea with spearmint. Good hot or for iced tea. (See our "How to Make Iced Tea" section.) Use 1/2 tsp per cup and steep 1 min. in near boiling water.

Moroccan tea culture is defined by the way tea (exclusively green tea) is prepared and consumed in Morocco, where it is widely consumed with food. The tradition has also spread throughout North Africa, parts of the Sahel, and southern Spain. Tea occupies a very important place in Moroccan culture and is considered an art form. Morocco is one of the biggest tea importers of the world. Moroccan-style mint tea is now commonly served all through North Africa. It is served not only at mealtimes but all through the day, and it is especially a drink of hospitality, commonly served whenever there are guests. Unlike Moroccan food, cooked by women, this tea is traditionally a man's affair: prepared by the head of the family, it is served to guests, and it is impolite to refuse it.
